The arcos — the arches — come from the old aqueduct that crosses Puebla, the city our family is from. Stone arches you can still walk under, in a city built around food, faith, and family.
When we opened on Bushwick Avenue, we kept the arches in the name. Because the recipes came with us, the way the streets did, the way the language did. Mexican, by way of Brooklyn now — but Pueblan, first.
